In addition to carefully selected ingredients from across Toyama Prefecture,we procure high-quality ingredients from throughout Japan,then carefully deep-fry them in 100% safflower oil using thin battering to achieve the light overall feel typical of Kansai-style tempura.
These selections are made even more delicious thanks to the accompanying rice, which is grown right here in Toyama.
Meticulously selected ingredients, mostly coming from right here in Toyama Prefecture, are carefully deep-fried one by one using 100% safflower oil with a thin batter layer on the outside to impart a light overall feel typical of Kansai-style tempura. Both firefly squid and Japanese glass shrimp are popular early-spring ingredients in Toyama, and with these and others, we place a strong emphasis on local, seasonal ingredient selection while endeavoring to bring out their inherent flavors through our tempura.
Enjoy well-known sake such as Kachikoma, Haneya and Masuizumi from local brewers together with changing cuisine throughout the seasons. We also carry bottles from local wineries such as SAYS FARM in the mountains of Himi and Kanata Winery in Uozu, and even the groundbreaking sake "IWA" which is brewed by Dom Pérignon Chef de Cave ("Cellar Master") Richard Geoffroy. Resembling a hidden-away cottage on the riverbank—complete with lovely views of cherry blossoms in the spring—our cozy little shop offers delectable tempura made using seasonal Toyama ingredients. Only counter seating is provided to ensure that every customer is well served, and meals are available by reservation only.
